For years, my sisters and I have been cooking glutenfree foods for our family. Susan collected, developed and tested many yummy recipes, then published them in a cookbook. Posts on this blogspot contain a wealth of information for living a glutenfree life.<br />

Lately, I have been searching out and trying gluten-free recipes for snacks and treats for children. I am trying to avoid table sugar in these recipes and move towards healthy ingredients. I appreciate Susan sharing this venue with me!<br />
<br />
Many of my recipes use honey since it is a natural whole food that is more easily metabolized by the body. A caution about honey is that much of the honey you buy at a grocery store has been corrupted so to speak. Buy pure, local honey that you can trust.<br />
<br />
SWEET POTATO BROWNIES<br />
This is a recipe for Chocoholics!<br />
<br />
1 cup mashed sweet potato (I used the orange "yam" variety. I peeled and cut the yam into cubes, then put it in a pan of boiling water, put a lid on and cooked it on medium high until mashable.)<br />
<br />
1/2 cup smooth nut butter of choice. (The unknown author of this recipe recommended almond or cashew butter. I used peanut butter. Be sure that whatever kind you use is natural without added sweeteners, etc.)<br />
<br />
2 T. pure 100% maple syrup or honey<br />
<br />
1/4 cup cocoa powder.<br />
<br />
A handful of carob chips (optional). I used Enjoy Life mini chocolate chips.<br />
<br />
Preheat the oven to 350 and grease a small cake/loaf pan. On the stove, melt nut butter with sweetener. In a large bowl add the mashed sweet potato, melted nut butter and maple syrup, and cocoa powder and mix well. Fold in chocolate chips. (I was pleased with the texture of the batter. It was quite cake-like.) Pour mixture in greased pan and bake for 20 minutes or until cooked through. Remove from the oven and allow to cool completely before slicing and refrigerating.<br />
<br />
These brownies are best when cooled completely. Store in frig or freezer and ENJOY!<br />
<br />
HONEY POPCORN<br />
I use non-GMO popcorn<br />
<br />
1/2 cup popcorn kernels<br />
<br />
1/4 cup honey<br />
2 T. butter, not margarine or substitutes for health's sake<br />
1/4 tsp. cinnamon<br />
<br />
1/4 c. raisins and 1/4 c. almonds if desired.<br />
<br />
Pop the popcorn with an air popper into a large bowl.<br />
Sprinkle in the raisins and almonds.<br />
Boil the honey, butter and cinnamon together in a saucepan for 2-3 minutes. Pour over the popcorn mix. Stir and serve.<br />
<br />
NICE CREAM<br />
<br />
2 frozen bananas<br />
<br />
Other frozen fruit of choice. (We used mango, strawberries, and peaches)<br />
<br />
Put in a blender with enough milk, nondairy milk or water to reach consistency of a "nice cream."<br />
Eat immediately or freeze. I froze it in paper cups with a plastic spoon stuck in it for a handle.<br />
<br />
GRAIN-FREE GRANOLA<br />
This is a hit at our house!<br />
<br />
1 cup pecans or walnuts<br />
3/4 cup slivered almonds<br />
1/4 cup unsweetened coconut flakes<br />
1/4 cup pumpkin seeds<br />
<br />
1 tsp. cinnamon<br />
1/4 tsp. sea salt<br />
2 T. maple syrup<br />
1 T. coconut oil<br />
<br />
1/4 cup raisins, optional. Add after granola is baked and cooled if desired.<br />
<br />
Grate the first three ingredients in a blender. Put in a bowl and mix in the next four ingredients.<br />
If you are using solid coconut oil, warm it to liquid form before you add it. Spread it on a baking sheet lined with parchment paper. Bake at 300 for 10 to 15 minutes, stirring at least once. When granola is browned and crispy it is done. Be careful not to burn.<br />
<br />
PEANUT BUTTER HUMMUS<br />
<br />
One 15-oz. can garbanzo beans (chickpeas), drained and rinsed<br />
1/3 cup unsalted, smooth natural peanut butter (no added sugar)<br />
1/3 cup raw honey<br />
3 T. protein powder that is compatible with the other ingredients. <br />
(I used pea protein powder)<br />
1 tsp. vanilla extract<br />
1/4 tsp. salt<br />
<br />
Combine all ingredients in blender or food processor and process until completely smooth and creamy, scraping down the sides as necessary. Store in frig. We use it as a dip for apples, celery and carrots.<br />
<br />
POWER BALLS<br />
My grand kids make big batches of these, put them in the frig, and snack on them when hungry.<br />
<br />
1 c. oatmeal<br />
1/2 c. peanut butter<br />
1/4 c. flaxseed<br />
1 tsp. chia seed<br />
1/3 c. honey<br />
1 tsp. vanilla<br />
<br />
Mix. Roll in balls. Refrigerate.<br />
<br />
PUMPKIN BREAD<br />
<br />
3/4 cup almond flour<br />
3/4 cup rice flour<br />
1/4 tsp. salt<br />
1/2 tsp. cinnamon<br />
1/2 tsp. nutmeg<br />
1 tsp. baking soda<br />
1/2 T. xanthan gum<br />
1 cup pumpkin<br />
1/4 cup honey or 100% pure maple syrup<br />
1/2 cup oil<br />
1/4 cup water if needed<br />
2 eggs<br />
Enjoy Life dairy free chocolate chips if desired<br />
<br />
Grease pan and cut a piece of parchment for the bottom.<br />
Combine eggs, honey or syrup, oil, pumpkin. Add salt, cinnamon, soda, xanthan, and nutmeg.<br />
Mix. Add flours, then water as needed. Fold in chocolate chips.<br />
<br />
Bake 325 one hour or until toothpick comes out fairly clean.<br />

I’m not super great at following this rule, just because some of those foods make life so easy, but it is important because I’ve heard it from multiple sources. It is also especially difficult because many gluten free foods have more sugar and more processed ingredients. So to avoid it as much as possible, make as much of your own food as you can, and stay closer to “whole” foods. The more fruits, vegetables, and whole grains you get in your diet, the better (mostly because a lot of pre-made gluten free foods don’t have as many nutrients as desirable).</span></div>

We found that it worked well to make a large batch of gluten-free muffins. Brown rice flour goes stale quickly, so we froze leftover muffins the same day that we made them. Our children with celiac disease took several muffins in a bag, along with a protein source (like pistachios), carrots, apples, etc. They also often took a sandwich with gluten-free rice bread. Some other ideas for lunches are found in this photo. You can find a recipe for pumpkin muffins and rice bread in my cookbook. <br />

Hello readers! My dear mother-in-law asked me to write a couple blog posts from my perspective on being married to someone with celiac disease. So here is the first take. I'll introduce myself a little bit. My name is Camille. I'm 22, from Utah , and have been happily married for almost a year and a half. I recently graduated with a Bachelor's Degree in Studio Art from BYU-Idaho. I am almost as passionate about food as I am art (because cooking is an art in itself). </div>

I grew up in a home that was blessed with not having any really serious food allergies, and my mom delicious bread (though Susan does have really good recipes herself in her cookbook) so I’ve eaten my fair share of gluten. I knew a couple people who had celiac disease, and high-gluten sensitivities, which made me pretty aware of the disease, but I had no idea that when I met the young man who became my husband, I would have to change my whole way of cooking. </div>

When I started dating my husband and found out that he and some of his family had celiac disease, my immediate reaction was compassion towards them. I couldn’t imagine having to give up such a common ingredient found in our daily diet. I realized that if this relationship led to marriage, there would be a lot of sacrifices that I personally would have to make. And I have. It is hard not being able to make some of my favorite recipes because I simply haven’t found a way to adapt them…yet. I love baking, but still haven’t mastered making some gluten-free concoctions. In the midst of trying to adjust however, I have had a wonderful adventure! </div>

I’m no cooking or gluten-free pro yet though, so a huge lifesaver to me has been Susan’s recipe book. It is full of delicious recipes that I can easily make. A lot of the recipes are dishes new to me, so it has been fun to explore. There are other recipes that are familiar, making the gluten-free lifestyle more comfortable. Whenever I have friends asking for gluten-free recipes, I always recommend her book. </div>

I am delightfully surprised by the great taste of this sugar cookie. Delicious! I am rating these cookies at 9.5 out of 10. The taste and texture are great! I'll be right back...I am going to go and eat another one to see if I have any other input! :) Ha ha!<br />

I have been babysitting my little 9-month-old granddaughter for the past 1 1/2 weeks. Somehow the texture is better than most brands, though the taste is similar to several kinds. I am rating it at 9 out of 10. We have had a few loaves with holes in the middle, and the last time it happened, it affected about eight slices of the loaf. I sent in an email to Udi's with the hope that we might get a coupon for a new loaf. Sure enough, they worked with us in a kind way, will send a coupon in the mail to us for a new loaf, and reassured us that they are trying to fix the problem.<br />

I have been thinking a lot about parenting lately. Sometimes parents in society need to take the steps necessary to show love for children by providing the string of supportive rules and guidelines for them. I haven't been a perfect parent, that is for sure, but I definitely want to improve. The story below about the cell phone is a good one for me, too. I am trying to learn to leave my cell phone at a distance when I am interacting with family at dinner time and when I am on a date with my husband. It is a challenge for me since I am so task-oriented, but I know it is worth trying to do better.<br />

I was delighted to find out that one of the cereals was Honey Nut Cheerios, and it was gluten free! When I got home, I purchased Frosted Cheerios and Multi-grain Cheerios as well. I love these cereals! I enjoy mixing plain Cheerios with Honey Nut Cheerios, to lesson the sugar load. </span><br />

<span style="background-color: white; color: #222222; font-family: "georgia" , "times new roman" , serif;">I was fascinated as I read the back of the cereal box about the person (Phil) who works for Cheerios and made changes to the process to make these cereals gluten-free for his daughter-in-law and others. <span style="background-color: white; color: #222222; font-family: "georgia" , "times new roman" , serif;">I am glad that General Mills weathered the storm and stayed with gluten-free production, even though they had an unfortunate, </span></span><span style="font-family: "georgia" , "times new roman" , serif;"><span style="background-color: white; color: #222222;">one-time incident</span><span style="background-color: white; color: #222222;"> in July at their Lodi, California facility. The rail system was down, and the gluten-free oat flour was being off-loaded from rail cars to trucks. Due to human error, wheat flour ended up in the gluten-free line, and Cheerios cereal was cross contaminated. They had to recall boxes to prevent more people from getting sick. </span><span style="background-color: white; color: #222222;">A huge thank you to General Mills, and to Phil Zietlow, for removing gluten from the entire process and for making sure that the oats are sorted out and separated from the wheat and barley grains. Phil invented Honey Nut Cheerios as well. :) </span></span><br />

I always spend the extra money and get all-beef hot dogs. They are worth the money. My daughter and son love corn dogs, so it was fun to find this mix. We loved the taste and I am rating the mix at 9.5. <br />

Preparing these corn dogs was difficult for me, however. I couldn't get the batter consistency correct. It wouldn't stick to the hot dogs properly, and I had to press it around the hot dog. Then I tried adding more water with the hope that it would work better, but it didn't help and made it worse since it wouldn't adhere at all. It was worth the struggle though, and even though the corn dogs aren't as pretty as the gluten kind, we didn't care. :)<br />

My daughter made these and did a great job. Maybe it was so much fun because she made the rolls and I didn't have to do it. :) The rolls are tiny (about 3 inches in diameter) and the texture is quite dense, but they have good flavor. I am rating them at 7. We added a glaze and it improved the flavor greatly (to 8.5).<br />

In our opinion, Freschetta is the winner for sure! It has a great flavor, though the crust is slightly chewy. In addition, I need to clarify that I am pretty sure this pizza compares very well with a Little Caesar's pizza, but not with my distant memory of what Pizza Hut pizza tastes like. For a gluten-free pizza, it is quite tasty. My daughter (who can eat gluten) commented that it tasted as good as a gluten pizza. As you may guess, I am still partial to my homemade pizza recipe, found in my cookbook on page 164 and in my blog post of 9-24-14. :)</div>

I love the convenience of the ever-increasing variety of products in the freezer of many grocery stores that are gluten free. However, I think I will stick with Tortilla Pizza made at home. These are quick and easy to make, and our kids love them! :) See the recipe below, which is from page 162 in my cookbook, along with some other great tortilla wraps.<br />

We were giddy when we tasted these since they look so much like flour tortillas made with gluten. These tortillas may not be as flavorful as corn tortillas for some recipes, like Quick Chicken Tortillas in my cookbook, but they are great with cheese melted in them. The texture is good, though slightly gummy (consequently you may want to separate these with paper towels when microwaving since ours stuck together when we microwaved three of them at a time). The flavor is great, but there is a slight aftertaste. </span><br />

I jokingly said to my daughter, "OK...I stopped to smell the roses. I can check that off my list of things to do." We laughed, yet we thought about how it is important to take time for the joyful things of life, even though we are working hard to accomplish the things on our list. <br />

So, maybe having yummy peanut butter bars to snack on for a few days isn't a major thing to do to bring joy in my life, but sometimes simple things like that can add up to a happier day. :)<br />

Here is a recipe we adapted from the <i>Six Sisters' Stuff</i> cookbook (they had graham crackers in their recipe). The Kix* cereal substitution worked very well in place of the graham crackers and added a flavor that made it taste like a Reese's Peanut Butter Bar. Delicious! <br />
<br />

Gluten-Free No-Bake Peanut Butter Bars<br />
<br />
1 cup butter, melted<br />
2 cups powdered sugar<br />
2 1/2 cups crushed Kix cereal<br />
1 cup, plus 4 tablespoons peanut butter, divided<br />
1 1/2 cups milk chocolate chips<br />
<br />
Step 1: Place Kix cereal in a re-closable bag (Ziploc-type) and crush it with a rolling pin. <br />
<br />
Step 2: In a medium bowl, mix together melted butter, Kix cereal (be sure to measure after crushing it), powdered sugar, and 1 cup peanut butter until well blended. Press evenly into the bottom of an ungreased 9x13-inch pan. <br />
<br />
Step 3: In the microwave, melt the chocolate chips with the remaining peanut butter at 50 percent power, stirring every 30 seconds until melted and smooth. Spread over peanut butter layer.<br />
<br />
Step 4: Refrigerate at least one hour before cutting into squares. Makes 15 thin bars.<br />
<br />
*Kix cereal doesn't have a gluten-free label on the box, but the ingredient list makes it appear to be gluten free. We are quite sensitive to gluten and Kix cereal doesn't make us sick, but use it at your own risk.<br />

However, the Tinkyada noodles I have used for the recipe haven't been quite the same as the noodles I have eaten as I have ordered Pad Thai at the Thai restaurant we have nearby. The Tinkyada noodles taste good, but have been a little too thick for this recipe. I was excited to find Annie Chun's Pad Thai Brown Rice Noodles on the shelf in our grocery store. They are just your basic noodle, yet I like the thin cut. I am rating them at 10 out of 10, since there is nothing wrong with them...though they aren't a powerhouse of flavor since they are just plain noodles. :)<br />

Here is the recipe from my cookbook for Pad Thai:<br />

SERVES 6 TO 8<br />
<br />
2 boneless, skinless chicken
breasts<br />
2 tablespoons cooking oil<br />
1 pkg. Tinkyada® Fettuccine
Noodles or Annie Chun's Pad Thai Noodles<br />
2 tablespoons fish sauce<br />
⅓ cup brown sugar<br />
½ tablespoon sesame or
peanut oil<br />
2 teaspoons soy sauce<br />
½ teaspoon lime or lemon
juice<br />
¼ teaspoon red pepper flakes<br />
2 eggs, lightly beaten<br />
1 teaspoon minced garlic
clove<br />
1 cup cooked shrimp<br />
2 cups fresh bean sprouts<br />
½ cup dry-roasted peanuts,
chopped<br />
1 cup cilantro leaves<br />
<br />
1. Slice chicken into cubes while slightly frozen. Fry in cooking oil.<br />
<br />
2. Prepare noodles according to package directions. Combine fish sauce,
brown sugar, sesame or peanut oil, soy sauce, lime juice, and red pepper
flakes in a small bowl.<br />
<br />
3. Remove chicken from frying pan when fully cooked.<br />
<br />
4. Beat eggs and scramble eggs in frying pan. Add garlic and shrimp and
sauté for several minutes.<br />
<br />
5. Add bean sprouts, cooked noodles, chicken, and sauce mixture.
Before serving, stir in peanuts and cilantro.<br />

However, when I am in a big hurry, it is nice to know there are a some great gluten-free chocolate chip cookie mixes at the grocery store. I tried out three of them. (I also have a blog post about Arrowhead Mills GF Cookie Mix in my post from 4-6-2012, and a blog post about Glutino Cookies on 5-31-2013). It is kind of embarrassing that we love chocolate chip cookies this much. :)<br />

Bob's Red Mill Gluten Free Chocolate Chip Cookie Mix<br />

I am rating this mix at 5 out of 10. My first impression was that they have some type of bean flour in them, and sure enough...the label showed there is garbanzo bean flour in the mix. The bean flavor didn't last long since the chocolate chips helped to offset it. These cookies have a good texture and aren't too grainy, though they are slightly dry. The taste was average, but we definitely ate them since there was chocolate in them. :)<br />

Pillsbury Gluten Free Chocolate Chip Cookie Dough<br />

I am rating this product at 9.5 out of 10. This was our favorite cookie out of the three--due to taste, time savings, and convenience. It comes in a container similar to sour cream in size. You can find this cookie dough in the refrigerator section, probably near the eggs and other Pillsbury cookie dough. The only problem was that the quantity of cookies was too few for the price. These are delicious cookies, though. My husband said he would rate them at 10 for gluten free and would rate them at 8 in comparison to a gluten cookie. Yum!<br />

Betty Crocker Chocolate Chip Gluten Free Cookie Mix<br />

I am rating this mix at 7 out of 10. The flavor was quite good, but the dough was crumbly and difficult to form into a cookie shape. The cookies were a bit grainy, as well. Not that appearance matters too much, but as far as color and shape are concerned, they look the best out of the three mixes.<br />

I have no doubt that it is a healthy choice for a breakfast cereal. However, I can't stand it. It tastes terrible to me. :\ I tried adding it to my other gluten-free cereal to tone down the taste. Nope. Then I tried melting chocolate chips and adding some granola with it to enhance the taste. It kind of ruined the good taste of the chocolate. I am rating it at 2 out of 10. I will just add flax to my smoothies and call it good. :)<br />

Red Pepper Noodles*<br />
<br />
1/2 lb. gluten-free spaghetti noodles<br />
1 tablespoon olive oil<br />
1 diced red bell pepper (or orange bell pepper)<br />
1/2 cup diced onion<br />
2 teaspoons minced garlic<br />
2 tablespoons sesame oil<br />
1/2 teaspoon lemon juice<br />
1/2 teaspoon sugar<br />
Soy sauce, to taste<br />
<br />
1. Cook the noodles according to package directions. Drain noodles.<br />
2. Dice the red bell pepper and onion. Heat olive oil in a wok or large skillet.<br />
3. Saute the diced red pepper, diced onion, and minced garlic for 7-10 minutes.<br />
4. Stir in the cooked noodles, lemon juice, and sugar. Add soy sauce, to taste.<br />

The Pillsbury pizza crust caused my eyes to light up, however, since it is great to see companies like Pillsbury joining the gluten-free product wagon. I am rating the crust at 7, since the flavor was quite good, but it was chewy and dense and had a slight after-taste. We had a hard time finding the pearl centers for the flowers. Every craft store we checked carried the Wilton brand, and they are not gluten free. Happily, my older daughter eventually found this brand and they are gluten free. :)<br />

Wonder of wonders...I won! And...I won a really fun cookbook called <i>Six Sisters' Stuff. </i>The only challenge is that most of the recipes are not gluten free. My daughter was undaunted by this, however, and used Pamela's Baking and Pancake Mix as a substitute for the baking mix called for in their biscuit recipe. It is a great recipe, and the 7-Up in the recipe gives the biscuits a delightful flavor.<br />

Adaptation of Six Sisters Easy 7-Up Biscuits<br />
<br />
1/2 cup sour cream<br />
2 cups Pamela's Baking and Pancake Mix<br />
1/2 cup 7-Up<br />
1/4 cup butter, melted<br />
<br />
Preheat oven to 450 degrees F. Cut sour cream into Pamela's mix with a fork. Add 7-Up and stir just until combined. Add melted butter. It makes a very soft dough. Drop by the spoonful onto greased cookie sheet. Bake 11-13 minutes or until golden brown.<br />

He loves chocolate almond milk, and some of the Bolthouse juices, like Blueberry Goodness and carrot juice. We also found some Popcorn Indiana chips at Sam's Club and on amazon.com that have far less fat than regular chips. My husband likes to dip these chips in hummus, and I wanted to make a homemade recipe for hummus that would contain olive oil, instead of soybean oil. He also doesn't care for the taste of cumin, which seems to be a prevalent ingredient for hummus recipes. So, I have been trying out different combinations of spices...and I came up with this one. I hope you enjoy it. :)<br />

Basil-Oregano Hummus<br />
<br />
1 can garbanzo beans (15.5 oz.)<br />
1 1/2 teaspoons minced garlic cloves<br />
2 tablespoons olive oil<br />
2 tablespoons tahini (ground-up sesame seeds in a creamy mixture)<br />
4 tablespoons water<br />
1/2 teaspoon salt<br />
1/2 teaspoon dried basil leaves<br />
1/2 teaspoon dried oregano leaves<br />
1/2 teaspoon lemon juice<br />
1/2 - 1 teaspoon garlic powder<br />
1 teaspoon onion powder<br />

Blend all ingredients for several minutes in a high-powered blender.<br />
