I am not sure why it is a tradition to serve a sweet dessert-like salad during dinner, but my kids are thrilled with the idea. We got this recipe from my mom, who invented it. It is a great way to use fresh strawberries or raspberries. It is delicious!
Tip: When you make the Danish Dessert, be sure to use a saucepan with tall sides because it will usually
splatter when it boils and can cause a burn to your wrist as you are
stirring. Can you tell I am speaking from personal experience? :)
Creamy Raspberry Salad
1 pkg. raspberry Danish Dessert (or strawberry, if you are using strawberries instead)
2 cups frozen raspberries
2 cups whipping cream
1/4 cup powdered sugar
Step 1: Prepare Danish Dessert according to package directions. Pour into a large bowl.
Step 2: Add frozen raspberries (these will speed the cooling of the pudding). Cover bowl with plastic wrap and place in fridge for 1/2 hour.
Step 3: Whip cream and stir in powdered sugar. Fold into Danish Dessert and raspberry mixture. Chill salad until ready to serve.
Makes 7-9 servings
