Southwestern Salad
1 bag
mixed salad greens
½ cup
black beans
½ cup
chopped tomatoes
¼ cup
chopped green onions
½ cup
shredded cheddar cheese
½ cup
cooked corn, drained
mango
salsa or chopped mango
1 cup
diced cooked chicken
cumin,
to taste
salt
tortilla
chips
Dressing
1 cup
ranch dressing
2
tablespoons gluten-free barbeque sauce
1. To make
the salad, place salad greens, beans, tomatoes, green onions, cheese, corn,
mango salsa, chicken, tortilla chips, cumin and salt (to taste) in a large bowl.
2. To make
the dressing, combine ranch dressing and barbecue sauce in a small bowl.
Serves 6 to 8
