Gluten-free Recipes

My sister-in-law, Michele Ashman Bell, is an author.  I love her books!  (Check out her awesome blog at micheleashmanbell.blogspot.com.) When we had a family dinner last week-end, she shared an incredible salad recipe.  Here it is:

Lemon Garlic Salad

Large bag of Romaine lettuce
Swiss cheese, sliced into small strips
Cooked, crumbled bacon
Toasted, slivered almonds
Grape tomatoes

Dressing:

Juice of 1 lemon
3/4 cup canola or vegetable oil
2/3 cloves crushed garlic
Salt and Pepper, to taste

Combine dressing ingredients and wait 2-3 hours before serving.
