Recipe for Gluten-free Parmesan Noodles

I hope you are having a wonderful Memorial Day Week-end.  We had a great day today enjoying the beauties of nature.




We took our kids to a cabin and enjoyed steak and chicken on the grill, corn, carrots,  lemonade, and one of my favorite quick and easy side dishes:


Parmesan Noodles

¼ pound bacon, cut into pieces, or 2 tablespoon pre-cooked bacon pieces
3 tablespoons butter or margarine
2 cloves (or ½ teaspoon) crushed garlic
1 egg
⅓ cup Parmesan cheese
½  cup chopped green onions
½ 16-ounce package of gluten-free spaghetti or spiral noodles (*I love Tinkyada noodles)
garlic salt, to taste


  1. Cook bacon, pour off grease. (If using pre-cooked bacon pieces, disregard this step and add the pre-cooked bacon to the butter). Add butter and heat with bacon until butter melts. Add garlic and sauté. Remove from heat.
  2. Meanwhile, in a small bowl, mix egg, Parmesan cheese, and green onions together. Set aside.
  3. Cook the spiral or spaghetti noodles until done. Drain noodles and return them to the pan. Immediately add the Parmesan and egg mixture. Heat noodles until the egg is cooked. Add the bacon, garlic, and butter mixture to the noodles and mix well.

Serves 5 to 7
